Decadent Millionaire Topping

by Mari Ann on February 22, 2010

Makes 1 cup topping

This is VERY low carb, and high in fiber from the coconut and the pecans.

If you are counting sugar, count as 1 gm sugar

Remember…you are in control and you can enjoy desserts any time you want. Don’t feel like you have to eat it all in one day!

If you have the urge for something sweet – this will hit the spot. It is VERY sweet!

Makes a great topping for Vanilla Ice Cream, or you can mix with cream cheese and eat with a spoon!

Serving Size 2 TBL ( 1/8th the total recipe)

4 Carbs, 1 gms sugar, 2.5 gms fiber (that means only 1.5 Net carbs)
1 gms protein, 14 gms fat

Ingredients
1 cup unsweetened shredded coconut (I actually found this in the regular baking section at Kroger… the Kroger brand!)
1 TBL cocoa (can add more if you want)
4 TBL xylitol
1 pkg stevia
4 TBL melted butter
1/4 cup finely chopped pecans

Putting it together
1. Stir together all dry ingredients
2. Add the melted butter, and stir to combine

When using Xylitol please note that it is toxic to dogs, so do not let your four legged friends have anything with Xylitol.
