Beef & Lima Bean Skillet

low glycemic skillet meal to help burn belly fat

Count as 1 TWO-A-DAY Legume

Prep Time: 35 minutes

 


15 net carbs. 5 grams fiber, 2 grams sugar


Ingredients
1 lb hormone-free ground beef
1/2 finely chopped onion
1 TBL high-heat oil
1 1/2 cups water
1 TBL cumin
1 tsp black pepper
1/2 tsp salt
1 tsp rosemary
1 bay leaf
2 TBL Bragg’s amino (similar to soy sauce, but all natural, and much lower sodium)
12 oz pkg frozen baby lima beans
6 red bell pepper slices


Putting it together:
1. Add oil to a heavy skillet. Brown meat & onions until meat is no longer pink.
2. Add spices, Bragg’s amino and water
3. Reduce heat, cover and cook for 20 minutes
4. Add the lima beans, and cook 10 more minutes

You’re right – I brown it in chunks. In fact, this meat was only semi-thawed, so, I cut it into chunks while it was in the pan browning.

This recipe looks so yummy and I’m going to try it this weekend. The beef doesn’t look like ground beef though. Did you brown it in chunks?
